To celebrate Pride Month this year, myGwork member and food creative Fernando Sanchez has created summer recipes (in both English and Spanish) for each color of the Pride rainbow.
To kickstart our Pride Rainbow Recipe series, we’re celebrating the color red with a recipe for Gazpacho from Spain.

GAZPACHO RECIPE
Servings: 8 to 10
Time: 20 minutes plus chilling time
Ingredientes
· 1.5 kg of ripe plum tomatoes, cored and roughly cut into chunks.
· 2 Red Romano peppers, cored, seeded and cut
· into chunks.
· 2 medium size shallots, peeled and cut into chunks
· 1 clove of garlic
· 1 medium size cucumber, peeled and roughly cut
· chunks
· Salt to taste
· 1 cup extra virgin olive oil, more for drizzling
· 2 tbsp sherry vinegar
Preparation
Step 1: Combine tomatoes, red peppers, cucumber, shallots and garlic in a blender or, if using a hand blender, in a deep bowl. Blend at high speed until very smooth.
Step 2: With the motor running, add the vinegar and salt. Slowly add the olive oil. The mixture will turn bright red to orange and become smooth and emulsified.
Step 3: You could strain the mixture through a strainer or leave it as it is.
Chill until very cold and serve in glasses with a few ice cubes.
A drizzle of olive oil on top.

RECETA PARA EL GAZPACHO
Este año celebramos el mes de orgullo con una serie de recetas inspiradas en los colores del arcoiris. Empezamos la serie con una receta de gazpacho que simboliza el color rojo, creada por nuestro chef inovador y artistico, Fernando Sanchez.
Raciones: 8 - 10
Tiempo de preparación: 20 minutos y enfriar
Ingredientes
· 1.5 kg de tomato de pera maduro, sin corazón y cortados en trozos grandes.
· 2 pimientos rojos, sin pepitas y cortados en trozos grandes.
· 2 chalotas medianas, peladas y cortadas en trozos grandes.
· 1 diente de ajo
· 1 pepino mediano, pelado y cortado en trozos grandes
· Sal al gusto
· 240 ml de aceite de oliva virgen y un poco mas para decorar
